1. Opening Thought (Easy to Recall)

Sanskrit Saying: “कोऽरुक् ? कोऽरुक् ? कोऽरुक् ? हितभुक् हितभुक् ऋतुभुक्” Meaning: Who is healthy? One who eats wholesome food, in moderate quantity, at the right time and place.

Key Line: “Annena jātāni jīvanti” → Food gives life to all living beings.

Remember: Food = Life + Energy + Growth + Protection + Health

2. 3.1 What Do We Eat?

  • Food is essential every day.
  • Our food choices vary by region, culture, crops grown, taste and tradition.
  • India has huge diversity in food because of different soil and climate.

Activity 3.1 (Do at home): Make Table 3.1 → List food items eaten for 1 week. Observe: Same food every day or variety? Compare with friends.

Activity 3.2 (Explore): Fill Table 3.2 for different states (Punjab, Karnataka, Manipur + more). Pattern to remember: Traditional food = locally grown crops (e.g., Punjab → wheat + makki di roti; Karnataka → ragi + dosa).

3.1.2 How have cooking practices changed?

  • Old → Chulha (wood fire), sil-batta (stone grinder)
  • New → Gas stove, electric grinder

Why changed? Technology, better transport & communication. Mnemonic: Old = Manual + Fire (Chulha + Sil-batta) → New = Easy + Electric.

3.2 What are the Components of Food? (Nutrients)

Food has 7 main components. Easy Mnemonic: C-F-P-V-M-W-R Carbohydrates | Fats | Proteins | Vitamins | Minerals | Water | Roughage (Fibre)

Energy-Giving Foods (Carbs + Fats)

  • Carbohydrates → Instant energy (glucose) Sources: Wheat, rice, maize, potato, banana, mango, sugarcane, sugar.
  • Fats → Stored energy + keeps warm Sources: Ghee, oil, nuts (almond, walnut, groundnut), seeds, butter, curd.

Body-Building Foods (Proteins)

  • Help growth + repair muscles.
  • Plant sources: Pulses (gram, moong, tuar dal), beans, peas, soya, nuts.
  • Animal sources: Milk, paneer, egg, fish, chicken, meat.

Protective Foods (Vitamins + Minerals)

Water & Roughage (Fibre)

  • Water: Absorbs nutrients, removes waste (sweat + urine). Drink enough daily!
  • Roughage (Fibre): No nutrition but clears undigested food, prevents constipation. Sources: Green leafy vegetables, fruits, whole grains, pulses, nuts.

Scientist to Remember: Dr Coluthur Gopalan – Started nutrition research in India → Mid-Day Meal (now PM POSHAN).

3.3 How to Test Nutrients? (Simple Lab Tests – Very Important for Exams)

Activity 3.5 – Test for Starch (Carbohydrate)

  • Drop dilute iodine on food.
  • Blue-black colour = Starch present. Fig. 3.7: Dishes with potato, bread, rice, etc. + dropper adding iodine.

Activity 3.6 – Test for Fat

  • Press food on paper → Oily patch + shines in light = Fat present.

Activity 3.7 – Test for Protein (Teacher demo)

  • Make paste → Add copper sulphate + caustic soda → Violet colour = Protein present. Fig. 3.8: Pestle-mortar + test tubes + droppers.

Table 3.3 (Fill in practical): Record Yes/No for starch, fat, protein in potato, rice, peanuts, etc. Key Point: Most foods have more than one nutrient (e.g., peanuts = protein + fat).

3.4 Balanced Diet

  • Contains all nutrients + roughage + water in right amounts.
  • Needs change with age, activity, health.
  • Junk food (high sugar/fat, low nutrition) → obesity + health problems. Example: Potato wafers vs Roasted chana → Choose chana!

3.5 Millets – Nutri-Cereals (New Focus in 2026-27 Book)

  • Jowar, bajra, ragi, sanwa – native Indian crops.
  • Easy to grow, rich in vitamins, minerals, iron, calcium, fibre.
  • Called nutri-cereals.
  • Packaged foods show nutrition info (FSSAI rule). Some foods are fortified (extra nutrients added) e.g., iodised salt.

3.6 Food Miles – From Farm to Plate

Fig. 3.10 (Story of Chapati): Flowchart – Farmer grows wheat → Threshing & winnowing → Storage → Grinding & packing → Transport to shop → Chapati on plate. Food miles = Total distance food travels. Why reduce? Less cost, less pollution, supports local farmers, fresher food.
